The wet conching system CWC 1000 was developed for wet conching of chocolate and chocolate-related masses. This unit can carry out mixing and homogenization, and remove volatiles, acids, and moisture from the product, improving the viscosity, yield, and taste characteristics of chocolate.
The conching effect is achieved by thin-film evaporation where a fast rotating disc sprays the chocolate and at the same time pre-heated air blows over the product.
The capacity of the CWC 1000 is up to 1,000kg/h, depending on the desired flavour and moisture content in the product.
The conching unit should be installed on a mixing tank with a circulation system which can be either supplied by Caotech or provided by the customer.
